Mississippi Mud Cake


Mississippi Mud cake , the name is given because of the resemblance of the banks of Mississippi river. The treat contains a gooey chocolate sauce on top of a crumbly chocolate crusty cake . I tried to make it without eggs and used condensed milk instead . It came out perfect and everyone in the family enjoyed each slice of it. For the second day of BM #33 under Eggless Baking theme, I prepared this cake. So let's start the recipe . Yum

Ingredients:
For the Cake:
1 1/2 cup all purpose flour+ 2 teaspoon for dusting cake pan
3/4 cup unsweetened cocoa powder
1/2 cup brown sugar
1 can condensed milk , 400 g
1 and 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 cup vegetable oil
1 teaspoon vanilla extract

For glaze &Topping:
1 /4 cup walnut halves
1/2 cup semisweet chocolate chips
1/4 cup honey
1/4 cup heavy cream
1/4 cup coconut, shredded

Method:
Preheat oven to 180 degree . Line and dust a 9 " cake tin with oil and dry flour. In a bowl, whisk together the condensed milk and brown sugar. In another bowl, whisk together the flour and cocoa powder, set aside . Add , oil , baking powder , baking soda and vanilla essence and mix well.
Add this wet mixture slowly in sifted flour , folding it gently .

Pour the batter into the prepared cake pan. Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean and the cake is perfectly baked.
Remove the cake from the oven , cool on wire rack .

Reduce the oven temperature to 170 degree . Spread the walnuts on baking sheet and bake for about 10 minutes.
For Glaze :
In a pan add the chocolate chips, honey and heavy cream. Stir over medium-low heat until the chocolate is melted and the glaze is smooth.
Pour the chocolate mixture over the cake. Sprinkle the walnuts and then the coconut.

Serve-6. Baking time -35 to 40 minutes

Molten Chocolate Cake

Molten chocolate cake or molten lava cake is a popular dessert that is usually made with butter , sugar , eggs and chocolate . I tried to make the eggless version of the chocolate lava cake from here and end up with this gooey , rich and chocolaty cake. Since I don't have ramekins , I made the cake in normal cake tin but I thought it would be more appealing if would have done in ramekins. Fresh raspberries, a drizzling of raspberry or chocolate sauce, and dustings icing sugar may be added to enhance flavor, or a sprig of mint may look more appealing as well. For a more intense chocolate taste, you may also add a tablespoon of strong coffee . So let's start the recipe . Yum 








Ingredients:

Dry ingredients
:
1 cup cake flour
1/4 cup cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
A pinch of salt


1/4 cup chocolate chips
1/2 cup unsalted butter
3/4 cup brown sugar
1/2 cup yoghurt , beaten
1 cup milk
1 teaspoon icing sugar for dusting

Method:
Preheat oven to 180 degree and grease and dust a 8" cake pan or 5-6 small ramekins.
Sift the dry ingredients in a bowl . Whisk together brown sugar and butter in another bowl till frothy.
Add beaten yoghurt in the butter mixture , beat it again .
Now slowly incorporate flours in two batches alternatively adding milk with the flour.



Pour half of the the batter in the cake tin or ramekins , top it up with a layer of chocolate chips and pour the remaining batter over the chocolate chips.
Bake for 30 to 35 minutes if using the cake tin or for 12to 15 minutes if using ramekins.




Cool the cakes on wire rack and dust with icing sugar before serving . You may add some cherries or strawberries too.



Serve -6. Baking time -30 minutes

Note: I used the cake tin since Don't have ramekins but you must try this cake in ramekins for better results.

Chocolate Zucchini Cake


For the last day of BM# 43 under Healthy Desserts for kids , I made this Chocolate Zucchini Cake from King Arthur Site. I replaced a cup of all purpose flour with whole wheat flour . The Zucchini in the cake gave it a moist and gooey texture and everyone in the house loved it. No one could even predict the presence of Zucchini in it. This is a wonderful idea to incorporate veggies in the cake and make it healthy for kids.So let's start the recipe.yum





Buckwheat Cookies

Gluten free buckwheat flour cookies ?? Eww !! What have you made , I won't eat that , those are my hubbies words when I told him that I have prepared gluten free cookies . But after lots of insisting he tried one and said oh my God these cookies are so crunchy , chewy , mouth melting and delicious . I got a thumbs up from him and that means a lot to me.
