Mississippi Mud Cake
Mississippi Mud cake , the name is given because of the resemblance of the banks of Mississippi river. The treat contains a gooey chocolate sauce on top of a crumbly chocolate crusty cake . I tried to make it without eggs and used condensed milk instead . It came out perfect and everyone in the family enjoyed each slice of it. For the second day of BM #33 under Eggless Baking theme, I prepared this cake. So let's start the recipe . Yum

Ingredients:
For the Cake:
1 1/2 cup all purpose flour+ 2 teaspoon for dusting cake pan
3/4 cup unsweetened cocoa powder
1/2 cup brown sugar
1 can condensed milk , 400 g
1 and 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 cup vegetable oil
1 teaspoon vanilla extract
For glaze &Topping:
1 /4 cup walnut halves
1/2 cup semisweet chocolate chips
1/4 cup honey
1/4 cup heavy cream
1/4 cup coconut, shredded
Method:
Preheat oven to 180 degree . Line and dust a 9 " cake tin with oil and dry flour. In a bowl, whisk together the condensed milk and brown sugar. In another bowl, whisk together the flour and cocoa powder, set aside . Add , oil , baking powder , baking soda and vanilla essence and mix well.
Add this wet mixture slowly in sifted flour , folding it gently .
Pour the batter into the prepared cake pan. Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean and the cake is perfectly baked.
Remove the cake from the oven , cool on wire rack .
Reduce the oven temperature to 170 degree . Spread the walnuts on baking sheet and bake for about 10 minutes.
For Glaze :
In a pan add the chocolate chips, honey and heavy cream. Stir over medium-low heat until the chocolate is melted and the glaze is smooth.
Pour the chocolate mixture over the cake. Sprinkle the walnuts and then the coconut.
Cut into slice and serve .
