Date Cake
Dates are rich source of nutrients like Iron, Protein and vitamins. Either use them raw or ripe or dried they taste awesome and do wonders for our health. I have made this cake with dried dates and guess what my daughter loved it very much. Dates are the most healthy and cheapest dry fruit and can be used in shakes , puddings , Halwa and Cakes . So let's start the recipe . Yum
Ingredients:
1 cup dried pitted dates, chopped
1 cup brown sugar
60g un salted butter
1 teaspoon bicarbonate of soda
2 cups self-raising flour/all purpose flour
1 teaspoon nutmeg and cinnamon spice , ground
2 tablespoons icing sugar
Water as needed
Method:
Preheat oven to 170°C . Lightly grease a baking tin or pan .
Place dates, sugar, butter, bicarbonate of soda and 1 cup cold water in a pan over medium heat.
Cook and stir for 6 to 8 minutes or until butter melted.
Bring to the boil. Remove from heat. Cool for 10 minutes.
Sift flour and mixed spice into a bowl. Add date mixture. Fold in the mixture.
Bake for 1 hour or until a toothpick inserted in centre comes out clean.
Cool on wire rack and dust with icing sugar.
Serve cooled.
Serve-4. Baking time -1 hour
