Baking with Sapana

I made these simple eggless vanilla cupcakes with chocolate buttercream frosting. These are simply irresistible and would be perfect for kids party as well. I tried this recipe from a book of Cupcakes and it is a wonderful recipe .As we don't use eggs I always looked for eggless baking recipes and when I found this recipe I was sure to try it . While searching the internet I found this interesting Campaign created by Foodpanda , the fastest growing online food portal of India ,to provide free mid meal to about 1.4 million under privileged school going children . In collaboration with Akshyptra foundation and ESPN cricinfo ,FoodPanda organized this campaign to support nutrition for people in need and understand the importance of healthy eating . A cupcake is a small cake designed for one serving with frosting . I was always confused with cupcakes and muffins and can't understand the difference till today.I guess it's something about the icing and batter , if anyone know , please do clear it to me. Now the question arises Can you have Cupcakes in breakfast and the answer to that is , You may have cupcakes for breakfast when healthy breakfast is present in your cupcake .  So let's start the recipe .yum

Mississippi Mud cake , the name is given because of the resemblance of the banks of Mississippi river. The treat contains a gooey chocolate sauce on top of a crumbly chocolate crusty cake . I tried to make it without eggs and used condensed milk instead . It came out perfect and everyone in the family enjoyed each slice of it.
