Nan Khatai
Nan khatai are Indian version of shortbread cookies. These are eggless biscuits loved by all age groups and serve with tea or milk. Normally prepared with all purpose flour , gram flour and semolina , are crispy outside and very soft from inside. So let's start the recipe. Yum
Ingredients:
1/2 cup all purpose flour/maida
1/3 cup semolina/suzi
1/3 cup gram flour/besan
2/3 cup powdered sugar
1 cup clarified butter/ghee
1 teaspoon baking powder
1 teaspoon cardamom powder
1/4 cup almonds, thinly sliced
Method:
Take sieved all purpose flour , semolina and gram flour in a bowl.
Add baking powder , cardamom powder in it.
To this add clarified butter and powdered sugar. Slowly mix all ingredients with hand. First it will appears like bread crumbs. Add 2 teaspoon more clarified butter if required and knead a smooth dough. Set aside for 10 minutes.
Make 20-25 round balls and press them in palms. Make a thumb impression in center and place almonds in it.
Line a baking tray with baking paper or butter and place these cookies at a distance of 1 inch away from each other.
Bake at 170 degree for 20 minutes or till done.
Serve with tea or milk.
Serve-5. Baking time -20 minutes
Note: You may use unsalted butter instead of ghee.
It can be stored in air tight for few weeks.
